Hello, my friends! Yay, it’s weekend again! And I’m excited to share with you one of my all time favorite quick snacks. Avocado toast, topped with alfalfa sprouts, onion and cherry tomatoes. There are so many creative ways to fancy up your avocado toast. The best part is that it’s always amazingly tasty and it’s perfect for breakfast, lunch and dinner.
Here’s what you need for this quick and simple avocado toast:
1 ripe avocado
2 tsp. freshly squeezed lemon juice
onion (or red onion, spring onion)
salt and pepper to taste
Toast bread. Use a fork to mash the avocado in a small bowl. Add 2 tsp. freshly squeezed lemon juice and salt and pepper to your taste. Spread on the warm toast and top with alfalfa sprouts, onion rings and sliced cherry tomatoes. This simple, healthy and amazingly tasty avocado toast is usually ready for less than 5 minutes!
