My little tribe and I are plant-based food lovers. I always strive to cook healthy and to show the kids that there is nothing better than homemade food, prepared with much love and care.
Today, I present you a wonderful easy recipe for black bean paste, which I made for one of our Sunday picnics this spring. In combination with homemade whole grain bread and fresh spring vegetable salad, it was light and super delicious lunch in nature.
Ingredients for Black bean paste with dried tomatoes:
300 g back beans
7-8 dried tomatoes
2 cloves of garlic
1 tablespoon sesame tahini
2 tablespoons olive oil
1 pinch of oregano
1 pinch of black pepper
1 pinch of salt
Instructions for Black bean paste with dried tomatoes:
Soak the beans for about 12 hours. Drain the beans, discard soak water and rinse the beans with fresh cool water. Place the beans in a saucepan, bring water to a boil and cook on a low heat for about 1 hour and a half. When the beans are cooked, drain the water and leave them to cool to room temperature.
Soak dried tomatoes for 30 minutes. Drain well and cut them into slices. Put the beans and dried tomatoes in a blender, add sesame tahini, olive oil and spices and blend them until you get a homogeneous mixture.
The black bean paste is so delicious on a slice of homemade bread accompanied by fresh vegetable salad. Perfect for outdoor lunch and picnic!
