Yay, it’s strawberry season again! And I’m brimming with happiness: ) I already made some incredibly tasty strawberry cakes and tarts and a lovely refreshing strawberry lemonade. And yesterday I decided to surprise my two monkeys with something irresistibly delicious. Strawberry ice cream! There is nothing better than a yummy homemade ice cream in a super warm spring day! This one is vegan, it’s for sure healthier and very easy to make.
Ingredients for Easy vegan strawberry ice cream:
1 cup fresh (or frozen) chopped strawberries
1/3 cup soaked cashews
agave nectar (or maple syrup) to taste
1 tsp. lemon juice
a pinch of vanilla
Instructions for Easy vegan strawberry ice cream:
Soak cashews for about 2 – 3 hours. Place strawberries, cashews and all other ingredients in a blender and blend until smooth. If you don’t have an ice cream machine (like me), pour the mixture into a container and put in freezer for about 3 hours.
In order to reach the required consistency, remove the mixture from freezer in every 20-30 minutes and stir with a fork. You can do this until the ice cream is done. Serve this incredibly tasty vegan strawberry ice cream, topped with strawberries, chopped cashews or other fresh fruits. Hope you will love it! Enjoy : ))
