One of my favorite things about fall is pumpkin. Besides being perfect for autumn home decoration (love it!), it is great for both sweet and savory dishes.
Today I share with you a simple and tasty pumpkin dessert, which is a precious memory from my childhood… Roasted pumpkin with honey and walnuts. When I was little, pumpkin used to come from my grandma’s garden and honey was homemade and extremely tasty. Oh, sweet memories. Well, today we buy pumpkins from the market, but fortunately we have walnuts from my hubby parents’ garden and amazing raw organic honey, produced by his cousin. So far so good : )
Here’s what you need for this lovely easy pumpkin recipe:
Ingredients for Roasted pumpkin with honey and walnuts:
1 small pumpkin (about 1 kg), peeled and sliced
1 cup of water
5 – 6 tbsp. raw organic honey
1/3 cup of walnuts
3/4 tsp. cinnamon
Instructions for Roasted pumpkin with honey and walnuts:
Preheat oven to 200ºC. Cut the peeled pumpkin into slices and place them in a baking tray. Pour the water into the bottom of the tray. Roast until pumpkins are caramelized and tender. Take from the oven and serve with honey, walnuts and cinnamon. Et voilà, your pumpkin dessert is ready!
