Hello guys and Happy Monday! I hope you all spent a beautiful weekend with your loved ones! Let’s kick off the week with this yummy and hearty vegan red lentil soup, which is one of my kids’ favorite winter dishes. Sweet potato, carrot and red lentil soup with celery and sesame seeds topping. This homemade kid friendly soup is incredibly tasty and will certainly warm you up in a cold winter day : )
Ingredients for Sweet potato, carrot and red lentil soup:
Serves 4
1 cup red lentils, soaked, rinsed and drained
1 large sweet potato, peeled and chopped
3 carrots, peeled and chopped
1 large onion, peeled and chopped
3 garlic cloves, crushed
1 tbsp organic coconut oil
1/2 tsp. ground turmeric
1 tsp. red paper
1/2 tsp. dried thyme
salt to taste
4-5 cups of water
celery leaves and sesame seeds for topping, if desired
Instructions for Sweet potato, carrot and red lentil soup:
In a large saucepan heat the coconut oil over medium-high heat and cook the onion and garlic for about 30 seconds. Add water, red lentils, sweet potato and carrots as well as turmeric, red paper and thyme and bring to boil. Let simmer for about 30 minutes until the lentils and vegetables are soft. Season with salt and allow the soup to cool.
Purée the soup in a blender until smooth. Serve it warm, garnished with celery leaves and sesame seeds or other creative topping : ) Enjoy!
